2 Ingredient Banana Pancakes

Would you believe that these banana pancakes are made with 2 ingredients only? Yes you read it right! It’s healthy, just a combination of fruit and protein. No need for sugar since bananas are naturally sweet. You can also try adding some chocolate chips or dress them with syrup on top!
They are pretty simple to make but it’s quite tricky especially the flipping part. I find it very important that you brush your pan with a little butter. Keep them small about 3 inches so it would cook quickly and easier to flip. Before flipping, make sure the edges are set and the middle starts to bubble. Gently and slowly lift half of the pancake and flip!
- 2 small bananas
- 1 large eggs
- 1 large banana
- 2 eggs
- butter for the pan
Step by Step Instructions
Mash bananas using a fork or masher. Continue mashing until there are no large lumps. But I prefer to leave some small lumps for texture.
Beat the egg then pour over to the mashed bananas and mix well. So the consistency is like a scrambled egg and not like your regular pancake batter.
Set your fire in low heat. Butter your pan and pour your banana mixture. Remember to keep your pancakes small about 3 inches wide.
Check the edges if they are all set before flipping. If edges are set and the middle part starts to bubble, gently and slowly lift half of the pancake then flip!
Continue to cook the other side for a minute.
