I think every mom has a special cookie recipe and for me this gotta be my official mom cookie. Probably my son’s favorite snack I ever cooked. He would even grab my cookies if he saw me ate one. LOL. So if my son loved these cookies so much, for sure you’ll love it too!
This chewy oatmeal chocolate chip cookies are guaranteed flavorful, soft and chewy. Loaded with chocolate chips too! You can also add chopped nuts or raisins to the cookie dough too. And these cookies are not just delicious but healthy too with the addition of chia seeds.

1/2 cup softened butter

1/2 cup brown sugar

1/4 cup white sugar

1 large egg

1 tsp vanilla

3/4 cup flour

1/4 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

1 cup oats
-
1/2 cup chocolate chips

1/8 cup chia seeds
Step by Step Instructions
Step 1
Using an electric mixer, mix softened butter, brown sugar and white sugar in a bowl. Then add the egg and vanilla.
Step 2
In a separate bowl mix all dry ingredients.
Step 3
Then gradually add the dry mixture into the butter mixture.
Step 4
Add in your oats, chocolate chips and chia seeds then mix well. Cover the bowl with a cling wrap and chill the cookie dough in the fridge for at least 1 hour.
Step 5
Line a baking pan or cookie sheet with parchment or baking paper. Preheat oven at 350F.
Step 6
Scoop cookie dough using an ice cream scooper and roll the dough into balls. Space the cookie balls 2-3 inches apart. Then add more chocolate chips on top.
Step 7
Bake the cookies for 10-15 minutes until light brown.
Step 8
Remove from the oven even if the center is still soft and moist. Rest for at least 15 minutes on the cooling rack. It will continue to cook while resting. Serve or store in a close container.
