An embutido is like a meatloaf, Pinoy style! The ground pork is rolled and filled with eggs, hotdog, cheese, pickles, and pineapple. The common embutido recipe sold in groceries are wrapped with tin foil and stuffed with a little amount of fillings. But this recipe I am going to share with you was passed from generation to generation. We use “laya-laya” or caul fat. And here is Wikipedia’s definition of caul fat:
“Caul fat, also known as lace fat, mesentery, crépine or fat netting, is the thin membrane which surrounds the stomach internal organs of some animals, such as cows, sheep, and pigs, also known as the greater omentum. It is used as a casing for sausages, roulades, pâtés, and various other meat dishes.” – (Wikipedia)
Here in Cebu, you can buy laya-laya or caul fat in Colonade supermarket. The laya-laya adds flavor to the Embutido especially when it is baked.
INGREDIENTS:
- 1 kilo ground pork
- 2 medium sized carrots minced
- 2 medium sized onions minced
- 2 red bell pepper minced
- 1/4 cup soy sauce
- 2 eggs
- salt and pepper to taste
- 1/2 cup pineapple juice remains from the pineapple can (to add flavor)
- 1 small can pineapple tidbits
- 8 pcs hard boiled eggs sliced into 8
- 8 pcs hotdogs sliced to medium strips
- cheese sliced to medium strips
- pickles sliced to medium strips
- raisins *optional
- laya-laya wrapper, washed with water and calamansi to remove strong odor (You can use tin foil as an alternative)
PROCEDURE:
- Mix ground pork, carrots, onions, bell pepper, pineapple juice, raw eggs and soy sauce. Then add salt and pepper to taste.

- Lay down laya-laya wrapper in a clean flat surface.

- Place a cup of ground pork mixture and flatten it on the center of the laya-laya.Â

- Arrange the eggs, hotdogs, cheese, pickles, pineapple tidbits and raisins at the middle.
- Roll the ground pork mixture and laya-laya just like in the image below.
- Place them in a baking pan or pyrex then bake at 180 C.

- Once the laya-laya turns brown, remove from the oven.
- Let it cool, then slice the embutido and serve!
I prefer this dish to be served hot rather than the chilled one. You can use ketchup for the sauce. 🙂
