Easy Fruit Crepe Recipe

I am a big fan of fruit crepes. Feeling so frustrated (knowing how expensive it is buying from crepe stores), I tried making one at home. My first try was a flop. It was dry and flaky. It would be difficult to roll and place the filling in the center. I gave it another try and it was successful. So, this is my version of my easy fruit crepe recipe.

INGREDIENTS:

  • 1 c all purpose flour
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 1 1/2 c whole milk (I used Nestle fresh milk)
  • 4 large eggs
  • 3 tbsp unsalted butter, melted (I used Magnolia DariCreme Buttermilk butter)

PROCEDURE:

  1. Combine flour, sugar, salt, milk, eggs, and melted butter in a blender.
  2. Puree the mixture and allow bubbles to form on top, about 30 seconds. Let the batter sit for at least 15 minutes.
  3. Whisk the batter before cooking it into the skillet.
  4. Heat your skillet in medium heat. Lightly coat with butter.
  5. Add the batter and swirl to completely cover the bottom of skillet.
  6. Cook until sides are brown.
  7. Loosen the edges with a rubber spatula and turn over to the other side of the crepe (just like cooking pancakes).

  8. Repeat steps 4-7. Place the crepes in a covered container.
  9. Serve it with ice cream, whip cream, cornflakes, marshmallows and fruits.
